FIBER- dietary fiber prevents constipation, lowers blood cholesterol and may even help you lose weight. The refining process of white flour takes out a lot of the fiber for example 1/2 cup of white flour contains only 1.4g of fiber whereas 1/2 cup wheat contains 6.4 g of fiber!!!!
VITAMINS-the refining process also takes out many vitamins including folate, riboflavin, and many B vitamins. Some food manufactures will replace (enrich) the vitamins in white flour. However, in most cases your body can’t absorb these enriched vitamins as well as the natural ones.
PHYTOCHEMICALS-are found in plants and have many protective or disease preventive properties. Many function as antioxidants preventing oxidative damage. These are not found in white flour due to processing, but are plentiful in whole wheat. And unlike vitamins they can't be added back to the white flour.
