Delicious Veggie Ravioli
- 1 20-ounce package frozen cheese ravioli, or tortellini (use wheat) (4 cups)
- 2 teaspoons extra-virgin olive oil
- 4 cloves garlic, minced
- 1/4 teaspoon salt
- 1/8-1/4 teaspoon crushed red pepper
- 1 16-ounce bag frozen chopped or whole-leaf spinach
- 3/4 cup water
- 1/4 cup freshly grated Parmesan cheese
- 1/2 cup chopped broccoli
- 1 green onion chopped
Directions:
Cook ravioli according to directions on package.
Saute: olive oil, garlic, green onion, spinach, salt, crushed red pepper, water for 5-7 minutes.
Put 1 cup ravioli in each of the 4 bowls. Top with saute mixture and Parmesan.
