Anyone like EGGPLANT? I didn't either until I tried this baked eggplant parmesan. It is soooooo good and simple! This is an adaption from eatwell.com take a look.
Ingredients: (serves 4-6)
1 small can marinera sauce or just plain old tomato sauce
3/4 cup parmesan cheese
3/4 tsp garlic powder (if you plain old tomato sauce....use garlic salt)
2 eggs (or egg whites)
1 Tbsp water
1 large eggplant sliced into 1/4 inch thick slices
3/4 cup mozzarella cheese or pepper jack
Directions:
Preheat oven to 375 degrees. Beat the 2 eggs or egg whites with 1 Tbsp water. Mix parmesan with garlic powder. Dip sliced eggplant into egg mixture and then parmesan mixture (you may need to pat parmesan mixture into the eggplant). Place on oiled baking sheet. Bake for 30 minutes but flip over after 15 minutes. Then top each slice of eggplant with 1-2 Tbsp of marinera/tomato sauce and a sprinkle of cheese. Bake for 15 more minutes! This is one of my favorite summer meals!
