BUCKHEAD GOATS AND CAT WAFFLES (GF)
OR Buckwheat OAT Waffles (adapted from lexieskitchen.com)
My first gluten free experiment! We needed something for breakfast, why not waffles? So I looked up a buckwheat waffle recipe on one of my favorite gluten-free blogs and adapted in a little for the ingredients in my kitchen. My brother-in-law was over and saw the recipe. Unfortunately, I have terrible handwriting, so he thought I was making him buckwheat goats and cat waffles instead of Buckwheat Groats and Oat Waffles and the name stuck. The first waffle stuck to the waffle maker.....so I added 2 eggs and they were perfect. I topped them with nectarines and my homemade low sugar strawberry jam. Delicious! You can omit the eggs but then the product doesn't stay together as well!
Makes 6 waffles!
Ingredients:
1 1/4 cup water
2 Tbsp olive oil
2Tbsp honey runny
1 Tbsp lemon juice
1 tsp vanilla
1 cup Oats
3/4 cup brown rice flour
1/4 tsp salt
1/4 cup buckwheat groats
1 Tbsp baking powder
2 eggs (optional see above note)
Directions:
Blend together water, olive oil, honey, lemon juice, vanilla, oats, brown rice flour, and salt. Then mix in baking powder. Then add 2 eggs. Cook in a waffle maker until brown. Top with fruit, jam, or honey!
