Kneaders Healthier Whole Wheat Chunky Monkey Bread (Cinnamon Swirl Bread)
I happen to love Kneader French Toast! I found a recipe for it on Pinterest and decided that I wanted to try it but when I looked at the recipe there was noway I could make something with that much butter and sugar without feeling guilty. So I decided to try my hand at a healthier version. Although this doesn't taste like Kneaders it definitely satisfied my craving! And it really is pretty guilt free!
Ingredients: (makes 2 loaves or 24 chunky muffins)
Bread:
5-6 cups whole wheat flour
2 cups warm water
1 Tbsp yeast
1 Tbsp gluten
1 Tbsp dough enhancer
1 tsp salt
2 Tbsp honey
2 Tbsp olive oil
Top:
3/4 cup brown sugar
1 tbsp cinnamon
1/4 cup butter
Directions:
Mix water, salt, olive oil, dough enhancer, gluten, honey and yeast together. Then add flour to consistency. Mix everything together and then knead for 8 minutes. Let it raise for 30 minutes. Roll into balls. Mix cinnamon and brown sugar together. Put layer of balls into bread pan. Sprinkle with cinnamon and brown sugar. Drizzle a little bit of butter. Then do another layer of balls. And then top with cinnamon and brown sugar. Remember this makes two loaves so proportion butter, brown sugar and cinnamon evenly. Let raise for 30 more minutes. Cook at 350 for 25 minutes (you can also put three small balls into muffin tins and cook for 12 minutes at 350 for delicious chunky monkey muffins)!
For FRENCH TOAST CASSEROLE:
take 8 eggs
2 cups milk
1 tsp vanilla
1 loaf Chunky Monkey Bread
Beat eggs, milk, and vanilla. Put broken up bread in casserole dish and top with mixture. Cook 350 f0r 30 minutes.
