Pumpkin BEAN Chocolate Chip Muffins
Try these delicious pumpkin muffins for the holidays!
1 cup mashed beans (white, or pinto work best but any will work)
3/4 cup honey
2 eggs
1 cup pumpkin
1 1/2 c whole wheat flour
1 tsp baking powder
1 tsp baking soda
1tsp salt
1 tsp nutmeg
1/2 tsp ginger
1/2 tsp cloves
3/4 cup chocolate chips
Cook at 350 for 20-25 minutes (usually take longer than this). Mix wet ingredients then dry, batter will be thick.
Watch carefully when cooking.
